Spanish Rice And Chicken - cooking recipe
Ingredients

2 to 2 1/2 lb. chicken, cut up
1 tsp. paprika
1/2 tsp. each: garlic and celery salt
1 c. uncooked rice
3/4 c. each: onion and green pepper, chopped
1/4 c. snipped parsley
1 c. tomatoes (fresh or canned)
1 1/2 tsp. chili powder
1 1/2 c. chicken broth
Preparation

Season chicken with paprika, garlic salt and celery salt. Place chicken skin side up in greased shallow 2 1/2-quart baking dish or 13 x 9-inch baking pan.
Bake at 425\u00b0 for 20 minutes. Push chicken to one side.
Add rice, onion, peppers and parsley. Combine remaining ingredients and heat to boiling.
Pour over rice mixture; stir well.
Arrange chicken on rice.
Cover and continue baking 30 minutes longer or until rice is tender and liquid is absorbed.
Makes 6 servings.
