Orange Sherbet - cooking recipe
Ingredients

3/4 c. granulated sugar
3/4 c. water
grated rind of 1 orange
1 1/2 c. fresh orange juice
1 Tbsp. lemon juice
1/2 c. coffee cream
2 egg whites
Preparation

Cook sugar and water slowly for 10 minutes.
Add grated rind to syrup and continue cooking for several minutes.
Strain.
Add syrup to fruit juices.
Cool.
Pour into tray and allow to freeze firm. Remove mixture to ice cold mixing bowl.
Beat with rotary eggbeater until light.
Add coffee cream and fold in between egg whites to which a pinch of salt has been added.
Pour into tray and freeze. Makes 8 servings.
