Mexican Lasagne(Makes 10 To 12 Servings) - cooking recipe

Ingredients
    2 Tbsp. oil
    1 large onion, chopped
    2 cloves garlic, minced
    1 bell pepper, seeded and chopped
    2 (10 3/4 oz.) cans condensed tomato soup
    1 can enchilada sauce
    1 Tbsp. chili powder
    1 tsp. ground cumin
    salt and pepper
    10 oz. dry lasagne noodles, cooked and drained
    4 c. large pieces cooked chicken or turkey
    6 oz. thinly sliced sharp Cheddar or Jack cheese
Preparation
    Heat oil.
    Add onion, garlic and peppers.
    Cook, stirring until soft (5 minutes).
    Add soup, enchilada sauce, chicken, chili powder and cumin.
    Bring to a simmer.
    Cook about 10 minutes, stirring often.
    Season with salt and pepper to taste.
