Cape Cod Fish Chowder - cooking recipe

Ingredients
    1 large onion
    4 Tbsp. butter
    3 large potatoes, diced
    1 1/2 tsp. salt
    1 carrot, chopped
    1 pkg. frozen cod or haddock (approximately 3/4 lb.), cut in cubes
    1 (14 oz.) can evaporated milk
    2 c. water
    1/2 tsp. basil
    1 can corn
    shake of pepper
    parsley
Preparation
    Saute onion in butter.
    Add potatoes, carrot, seasonings, milk and water.
    Simmer for about 15 minutes.
    Add fish; simmer about 15 minutes more.
    Stir in corn with liquid (Niblets are okay). Warm through.
    Serve with a sprinkle of parsley.
