Mushroom And Leek Quiche - cooking recipe
Ingredients

6 large mushrooms, sliced
1 large leek, thinly sliced
3 Tbsp. butter
1 Tbsp. oil
1 Tbsp. flour
6 oz. Swiss cheese, shredded
2 Tbsp. parsley, minced
4 large eggs
1 1/3 c. half and half
1 tsp. salt
freshly ground pepper
1 tsp. dried oregano
prebaked pie shell
Preparation

Heat butter and oil; saute leeks over high heat until soft. Stir in flour.
Remove from heat and add mushrooms.
Mix the eggs and add the half and half; mix.
Blend in the leek mixture, cheese and salt and pepper.
Pour the mixture into a prebaked pastry shell, filling to 1/8-inch from top.
Sprinkle top with the oregano and parsley.
Bake for 40 minutes.
Let stand for 15 minutes before serving.
