Smoked Fish - cooking recipe

Ingredients
    1 gal. cold water
    1 1/2 c. salt
    1 to 1 1/2 c. brown sugar
    2 to 3 Tbsp. crushed bay leaves
    2 Tbsp. ground pepper
    1/4 tsp. garlic powder
    few drops red food coloring (if desired)
Preparation
    Soak fish in cold brine 12 to 18 hours.
    Rinse fish; pat dry. Smoke fish 8 to 12 hours.
