Barbecued Cornish Hens - cooking recipe
Ingredients

2 large fresh Rock Cornish Game hens or if frozen, thawed
salad oil
1/4 c. orange marmalade
1/4 c. butter or margarine
2 Tbsp. teriyaki sauce
citrus leaves, watercress or celery tops for garnish
orange wedges for garnish
Preparation

Remove giblets and neck from hens (save for other use).
Cut each hen in half with shears or a boning knife.
Rub skin with oil.
Place hens on barbecue grill over medium-hot coals, cooking for 25 to 35 minutes, turning frequently.
