Jalapeno Rice - cooking recipe

Ingredients
    2 c. rice, uncooked
    1/2 c. salad oil
    2 c. chopped onions
    1 or 2 jalapeno peppers (depending on your taste), stemmed, seeded and chopped small
    1/2 lb. Velveeta cheese, grated or cut into small pieces
    4 c. hot turkey or chicken stock or bouillon
    2 tsp. salt
    dash of pepper
    oleo or butter
Preparation
    Cook rice in oil until color changes slightly.
    Do not brown. Add onions and peppers.
    Add cheese, stock, salt and pepper.
    Stir to mix.
    Top with oleo or butter.
    Cover tightly and simmer for 30 minutes.
