Refrigerator Bran Muffins - cooking recipe

2 1/2 c. buttermilk
2 eggs
2 1/2 c. flour
1 1/4 tsp. baking soda
1 tsp. salt
1/2 c. oil
3 c. Raisin Bran cereal
1 c. sugar
1 tsp. baking powder
1/2 c. chopped nuts (optional)
Preparation

In large bowl, combine buttermilk, oil and eggs.
Beat well. In separate bowl, combine all dry ingredients, including cereal. Make a well in the dry ingredients; pour buttermilk mixture into well.
Stir just until moistened.
Fill muffin cups 1/2 full. Bake at 400\u00b0 for 20 to 25 minutes.
Batter can be refrigerated for up to 4 weeks.
