Zucchini Soup - cooking recipe
Ingredients

1 medium onion, chopped fine
1 clove garlic, chopped fine
2 Tbsp. oil
5 c. chicken broth
3 Tbsp. uncooked rice
1 1/2 c. grated zucchini
salt and pepper to taste
1 egg
3 Tbsp. Parmesan cheese, grated
1 Tbsp. chopped parsley
Preparation

Saute onion and garlic in oil until tender in large saucepan. Add chicken broth and uncooked rice and simmer 10 minutes covered. Add zucchini and salt and pepper to taste and simmer uncovered 15 minutes.
Beat together egg, Parmesan cheese and chopped parsley and whisk into soup and serve.
