Potato Cheese Soup - cooking recipe

Ingredients
    3 medium potatoes, peeled and quartered
    1 small onion, finely chopped
    3 c. milk
    3 Tbsp. melted margarine
    1 c. shredded Monterey Jack cheese
    1 c. water
    1 tsp. salt
    2 Tbsp. flour
    2 Tbsp. minced parsley
    1/8 tsp. white pepper
Preparation
    In saucepan, bring potatoes, onion, water and salt to boil. Reduce heat; cover and simmer until potatoes are tender.
    Do not drain!
    Mash slightly.
    Stir in milk.
    In a small bowl, blend margarine, flour, parsley and pepper.
    Stir into the potato mixture.
    Cook and stir constantly over a medium heat until thick and bubbly.
    Remove from heat; add cheese and stir until almost melted.
    Yields 6 servings (1 1/2 quarts).
