Inez Watson'S Green Tomato Pickles - cooking recipe

Ingredients
    1 gal. green tomatoes, quartered
    1 qt. onions, chopped coarsely
    1 qt. bell pepper, chopped coarsely
    1/2 c. green hot pepper, chopped
    1/2 c. salt
    1 qt. red vinegar (apple cider vinegar)
    5 c. sugar
Preparation
    Mix vinegar, salt, sugar and hot pepper.
    Combine and heat. Add tomatoes, onion and bell pepper.
    Bring to a boil, but don't let boil.
    Pack in hot jars and seal.
    Let ripen for 4 to 6 weeks. Delicious, especially with fish.
