Mexican Corn Bread - cooking recipe
Ingredients

1 1/2 c. self-rising cornmeal
1/2 tsp. salt
1 tsp. sugar
1 tsp. baking powder
1 c. buttermilk
3 eggs, slightly beaten
1 c. grated Cheddar cheese
1/2 tsp. or more Tabasco
2/3 c. butter or oil
1 c. creamed corn
1 medium onion
1 green bell pepper
Preparation

Grease 13 x 9-inch baking pan.
Sprinkle with a little cornmeal in the bottom; set aside.
Combine cornmeal with salt, sugar, baking powder, buttermilk and eggs, blending well.
Stir in cheese, bell pepper, Tabasco, oil or butter, corn and onion.
Turn mixture into prepared pan.
Bake at 400\u00b0 for 35 to 40 minutes or until done.
Makes 10 to 12 servings.
