Eggplant Fritters - cooking recipe
Ingredients

2 c. mashed eggplant
1 1/2 c. rice, cooked
1 c. sharp cheese
1/3 c. onion
1/3 c. flour
2 eggs, well beaten
salt and pepper
Preparation

Combine all ingredients.
Heat 1/2 cup oil in large skillet. Drop mixture by tablespoon and fry until golden brown.
Drain (serve hot). These can be frozen after frying and reheated in a 350\u00b0 oven for 10 minutes.
