Custard Pie - cooking recipe
Ingredients

2 1/2 c. whole milk
1/2 c. sugar
1 tsp. vanilla
1/2 tsp. lemon extract
1/4 tsp. salt
4 eggs, slightly beaten
1 (9-inch) unbaked pie shell
Preparation

Scald milk, sugar and salt.
Stir into beaten eggs, add flavorings.
Pour into unbaked pie shell, sprinkle with nutmeg. Bake at 400\u00b0 for 30 minutes.
To keep the bottom part of the crust from getting soggy, brush with unbeaten egg white.
This is a velvety custard in a tender-crisp pastry.
(I sometimes use 2 cups of milk and 1/2 cup of half and half, instead of 2 1/2 cups of milk.)
