Marinated Vegetables - cooking recipe

Ingredients
    quartered and sliced cucumbers
    yellow squash in julienne strips
    zucchini in julienne strips
    purple onion, sliced thinly
    chopped garlic
    sliced mushrooms
    bell pepper, sliced thinly
    chopped tomatoes
    fresh parsley
    1 bottle red wine vinegar
    1/2 to 3/4 c. sugar
Preparation
    Mix all vegetables in large bowl in any proportion with more tomatoes than other veggies.
    Add vinegar and sugar.
    Add parsley to taste and place all ingredients in sealed bowl in fridge overnight.
    Serve cold by dipping vegetables out of marinade in slotted spoon.
    Good for 2 days.
    Is best if fresh garden veggies are used.
