Fiesta Salad(Good Diabetic Recipe) - cooking recipe

Ingredients
    2 medium sweet red peppers
    1 (8 oz.) can green beans, drained
    1 (10 1/2 oz.) can white beans, drained
    1 (10 1/2 oz.) can kidney beans, drained
    1 small red onion, sliced thin
    1 tsp. olive oil
    2 Tbsp. lemon juice
    1/4 tsp. black pepper
    2 Tbsp. minced parsley
Preparation
    Cut red peppers in half and remove seeds.
    Place on a broiling pan and flatten.
    Broil 6 inches below heat for 8 minutes or until charred.
    Allow to cool, then peel and cut into 1/2-inch slices.
