Capri Sandwich - cooking recipe

Ingredients
    2 tsp. white wine vinegar
    8 1/4-inch thick slices, unpeeled tomatoes
    1 (1 lb.) loaf French bread
    1 clove garlic, halved
    1 (1 lb.) unpeeled eggplant, cut into 1/2-inch slices
    4 (1/4-inch) thick slices onion
    vegetable cooking spray
    2 Tbsp. chopped fresh basil
    1 Tbsp. chopped kalamata olives
    2 (1 oz.) slices Provolone or Mozzarella cheese, halved
Preparation
    Slice bread in half lengthwise.
    Place cut side up on a baking sheet.
    Broil 3-inches from heat for 30 seconds or until lightly browned.
    Rub garlic on cut sides of bread halves.
    Discard garlic.
