Peppered Beef Tenderloin - cooking recipe
Ingredients

3 to 4 lb. tenderloin
2 lb. small new potatoes
4 onions, quartered
1 Tbsp. olive oil
1/2 tsp. salt
1/8 tsp. pepper
smudge 1/4 c. chopped fresh parsley
2 Tbsp. Dijon mustard
1 Tbsp. black pepper
Preparation

Heat oven to 450\u00b0.
Mix smudge and rub on top of roast.
Place roast on rack in shallow roasting pan.
In large bowl, combine potatoes, onions and oil.
Season with salt and pepper.
Toss to cover evenly.
Arrange potatoes around roast on rack.
Roast 55 to 65 minutes at 425\u00b0.
Let stand 15 minutes after removal.
Serve with salad, bread and other vegetable and fresh fruit.
