Buttermilk Oatmeal Muffins - cooking recipe

Ingredients
    1 1/2 c. oatmeal
    1 1/2 c. buttermilk
    1 1/2 eggs, unbeaten
    1/4 c. plus 2 Tbsp. honey
    1 1/2 c. whole wheat flour
    3/4 tsp. salt
    1 1/2 tsp. soda
    1/2 c. oil
    1/2 c. nuts (optional)
    1/2 c. dates or raisins (optional)
    1 tsp. cinnamon (optional)
Preparation
    Soak the oatmeal in the buttermilk at least 1/2 hour.
    Beat eggs into oat mixture.
    Add honey.
    Stir in dry ingredients.
    Add oil and mix only until blended.
    Bake at 425\u00b0 for 15 to 20 minutes.
    Makes 12 large muffins.
