Oatmeal Pancakes - cooking recipe

Ingredients
    4 c. rolled oats (long cooking)
    1 c. flour
    1/4 c. sugar
    2 tsp. baking powder
    2 tsp. baking soda
    pinch of salt
    4 c. (1 qt.) buttermilk
    4 eggs, beaten
    1/2 c. melted butter or oil
    2 tsp. vanilla
Preparation
    Combine first 6 ingredients in a
    large bowl. Combine rest of ingredients in smaller bowl. Add liquid all at once to dry ingredients. Stir with a fork to blend. Do not overbeat. Let stand 30 to 45 minutes. Batter will thicken (if too thick, add a little more milk). Cook on hot griddle.
