Ingredients

4 oz. plain flour
pinch of salt
1 tsp. baking soda
1 1/2 tsp. cream of tartar
1 oz. sugar
1 egg
1/4 pt. milk
lemon juice
Preparation

Sieve flour, salt, soda, cream of tartar and sugar into bowl. Make hollow in center of mixture, crack egg into hollow and gradually add milk.
Stir with wooden spoon from the center, drawing the flour until all is mixed.
Heat skillet, add 1 tablespoon cooking oil.
Cook pancakes.
When finished, butter pancakes; sprinkle with sugar and lemon juice.
