Mixed Vegetables - cooking recipe
Ingredients

1/4 c. (1/2 stick) butter
1/2 tsp. fennel seed
1/2 tsp. black cumin seed
1/2 tsp. fenugreek seed
1 small onion, finely chopped
1/2 tsp. turmeric
1 tsp. finely chopped ginger
1/2 tsp. cumin
1/2 tsp. ground coriander
1/2 c. diced butternut, pumpkin or other squash
1/2 c. cut up broccoli
1/2 c. cut up green beans
1/2 c. diced potato
1/2 c. diced carrots
Preparation

Same as Navy Bean Pottage, but delete cabbage and pumpkin.
Use potatoes or add one large green plantain.
Add 1/4 teaspoon black pepper.
