Cuban Chicken Fricassee(Fricase De Pollo Cubano) - cooking recipe

Ingredients
    1 chicken, cut up
    1 batch sofrito (see sauces)
    10 green olives
    1 lb. potatoes, quartered
    2 to 3 c. water
    1 can baby sweet peas
    1 can pimentos, thinly sliced
Preparation
    Wash the chicken and remove the skin if you like.
    You can brown the chicken pieces in oil and then add the sofrito and water or if you're in a hurry, you can cook the chicken in the sofrito and water and delete the browning step.
