Orange Asparagus Sauce - cooking recipe

Ingredients
    1/2 c. butter
    1 1/4 tsp. Dijon mustard
    1 1/3 c. orange juice
    2 shallots
    2 lb. asparagus
Preparation
    Mince shallots; saute in a little of the butter.
    Add the orange juice and mustard.
    Reduce to 2/3 cup (10 minutes).
    Cook asparagus.
    Reheat sauce, adding rest of butter, a chunk at a time. Serve over asparagus; garnish with orange slices.
    Good alternative to high cholesterol Hollandaise Sauce.
