Herbed Potatoes In Olive Oil - cooking recipe

Ingredients
    2 1/2 lb. potatoes, peeled and thinly sliced
    2/3 c. olive oil
    2 Tbsp. minced fresh parsley
    2 Tbsp. minced fresh chives
    1 medium clove garlic, minced
    salt
    pepper
Preparation
    Combine oil, herbs, garlic, salt and pepper in large bowl. Soak potatoes in cold water 5 minutes.
    Change water once.
    Drain potatoes.
    Pat dry.
    Add to bowl.
    Turn to coat well.
    Spread into 12 x 14-inch baking dish.
    Bake until edges are brown, about 1 hour.
    Preheat oven to 350\u00b0 to 375\u00b0.
