Gumbo La Pontchartraine - cooking recipe
Ingredients

1 small stewing hen
1 tsp. flour
2 chopped onions
1 c. chopped celery
2 c. okra
2 c. tomatoes
1/3 chopped parsley
2 lb. shrimp, cook deveined
4 lb. crab claws
1 tsp. garlic powder
2 c. chicken stock or water
1 pinch thyme
1 Tbsp. seasoned salt
2 doz. oysters
1/2 c. chopped green pepper
2 tsp. Worcestershire sauce
Preparation

Cut chicken into serving portions.
Dredge lightly in flour. Saute in the melted shortening until brown.
Add onions and celery, cooking until soft.
Add all other ingredients except the okra and oysters.
Cook until the chicken is tender.
Add okra and oysters. Cook an additional 15 minutes.
Serve over rice.
