Super Eggplant - cooking recipe
Ingredients

eggplant
flour or dry bread crumbs or cracker crumbs
1 egg
2 Tbsp. milk
fat for frying
salt
Parmesan cheese
Preparation

Remove stem, if skin seems tough, peel (otherwise, panfry with skin).
Cut into 1/2-inch to 1-inch slices or strips.
Dip in flour or dry bread crumbs or cracker crumbs.
Then dip into an egg beaten with milk.
Dip into flour or crumbs again.
Fry in hot fat (olive oil is especially good) until brown on one side.
Turn slices and brown on other side.
Sprinkle with salt and Parmesan cheese and serve piping hot.
