Zuppa Di Ceci(Chickpea Soup) - cooking recipe

Ingredients
    1 large can chickpeas (little over 1 lb.), do not drain
    3 Tbsp. olive oil
    1/2 small onion, chopped
    1 tomato, peeled and chopped or use 2 Tbsp. canned tomatoes
    1/4 tsp. minced garlic
    3 c. water
    salt and pepper to taste
    2 strips bacon, chopped in very small pieces
Preparation
    Heat olive oil in medium-size saucepan.
    Add onion, cook over low flame until tender, about 4 or 5 minutes.
    Add tomato and cook for 3 minutes.
    Add chickpeas (undrained), garlic, water, salt and pepper.
    Bring to boil over high flame.
    Cover, leaving lid somewhat off pan and simmer for about 25 minutes.
    Fry bacon or microwave it until bacon is crisp.
    Drain and add to soup mixture. Cook an additional 5 minutes.
    Makes 4 servings.
