Light Turkey Soup - cooking recipe

Ingredients
    1 roasted turkey carcass with some meat attached
    10 c. water
    about 1 tsp. salt
    about 1/4 tsp. pepper
    1 medium size onion, sliced
    1 medium size carrot, sliced
    5 c. finely shredded nappa cabbage
    chopped parsley
Preparation
    Strip carcass of any large pieces of meat; dice enough meat to make 2 cups.
    Set aside.
