Diet Copper Pennies - cooking recipe

Ingredients
    2 lb. carrots, cooked crisp-tender, about 7 minutes
    1 large green pepper
    1/4 c. minced onion
    2 Tbsp. salad oil
    1/2 c. vinegar
    2 c. tomato juice
    1 tsp. dry mustard
    1/3 c. dry granulated artificial sweetener
Preparation
    Drain carrots.
    Combine green peppers, onions and carrots. Bring all other ingredients to a boil.
    Pour over carrots. Refrigerate.
    Will keep 6 weeks.
