Pork Chops And Sweet Potatoes - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    4 pork chops (1/2-inch thick)
    1 (20 oz.) can pineapple chunks in juices
    3 Tbsp. brown sugar
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
    2 medium sweet potatoes, peeled and sliced in 1-inch slices
    1 medium green pepper, cut in small pieces
    1 Tbsp. cornstarch
Preparation
    Heat oil in large skillet; add pork chops.
    Cook 3 to 4 minutes slowly on each side or until brown.
    Remove chops from pan.
    Drain pineapple, reserving juice.
    Add 1/2 cup of pineapple juice, brown sugar, salt and cinnamon to drippings and mix well. Add sweet potatoes; turn to coat with liquid.
    Return pork chops to pan.
    Bring to a boil.
    Reduce heat to low and simmer 20 minutes or until chops are tender.
    Stir in pineapple and green pepper.
    Simmer 10 minutes.
    Transfer chops to warm platter.
