King Ranch Chicken (Enchilada Pie) - cooking recipe

Ingredients
    1 small hen or large fryer or 2 lb. ground beef, cooked and drained
    1 medium size onion, chopped
    1 medium size bell pepper, chopped
    1/2 c. chopped ripe olives
    1 small jar pimentos, chopped or diced
    1 pkg. tortillas
    1 can cream of mushroom or cream of chicken soup
    1 can taco sauce
    salt, pepper and chili powder to taste
    1/2 lb. Cheddar cheese, grated
Preparation
    Boil hen until tender; debone and cut into small pieces.
    Mix with onions, bell pepper and pimentos.
    Wilt tortillas in chicken broth (reserved from boiling hen).
    Place in 9 x 13-inch greased Pyrex dish.
    Alternate with the chicken mixture.
    Mix the soup with taco sauce.
    Season with pepper and chili powder.
    Pour over chicken and tortillas.
    Sauce may be thinned with chicken broth, if desired.
    Top with cheese.
    Bake at 350\u00b0 for 1 hour.
