Chicken Okra Gumbo - cooking recipe

Ingredients
    1 spring fryer (about 2 lb.)
    1 1/2 lb. fresh okra
    1 fresh tomato, chopped
    1 large onion, chopped
    2 Tbsp. shortening
    3 Tbsp. bacon drippings
    2 Tbsp. flour
    3 qt. water
    salt and pepper to taste
Preparation
    Cut up chicken; cover with flour, salt and pepper.
    Fry until brown.
    Then fry okra with tomato and onion in the shortening. Make a roux in heavy skillet with grease from fried chicken and flour; brown roux.
    Add fried chicken and vegetables.
    Stir for a few minutes; add water.
    Add salt and pepper to taste.
    Cook for about 2 hours.
    Serves 6.
