Creole Rice And Tuna Casserole - cooking recipe

Ingredients
    1 c. raw rice
    2 eggs, beaten
    1/4 tsp. salt
    2 Tbsp. oil
    2 Tbsp. bacon drippings
    1 c. chopped onion
    2 Tbsp. chopped green pepper
    1/2 c. chopped celery
    3 Tbsp. soy sauce
    1 (7 oz.) can tuna
    chopped green onion
Preparation
    Cook the rice and set it aside to cool.
    Cook the eggs in the oil like you would for an omelet.
    Remove it from the skillet and cut into small pieces.
    Cook the onion, green pepper and celery in the skillet with the bacon drippings until just tender.
    Add the rice, eggs and soy sauce and stir gently to mix.
    Next, add the tuna which you have drained and flaked.
    Place in casserole.
    Bake at 425\u00b0 until thoroughly heated.
