Zucchini Bread - cooking recipe

Ingredients
    1 C. oil
    3 eggs
    2 C. sugar
    2 C. grated zucchini
    2 tsp. vanilla
    3 C. all-purpose flour
    1 tsp. salt
    1 tsp. soda
    3 tsp. cinnamon
    1/4 tsp. baking powder
Preparation
    Do not beat. Add 1 cup pecans if desired. Spoon into 2 loaf pans. Bake 325 degrees for 45 to 60 minutes. If you grate and freeze zucchini in the summer, you will need to freeze 3 cups for this recipe.
