Crustless Vegetable Quiche(Serves 4) - cooking recipe

Ingredients
    1/2 c. chopped celery
    2 Tbsp. chopped onion
    1 (10 oz.) pkg. chopped broccoli, spinach or asparagus, thawed and drained
    6 eggs or egg substitute
    1 c. skim milk
    1/2 c. plain low-fat yogurt
    1/4 lb. shredded Swiss cheese
    1/4 tsp. salt and pepper
    1 Tbsp. plus 1 tsp. grated Parmesan
Preparation
    Preheat oven to 350\u00b0.
    Saute celery and onion in a nonstick pan, sprayed with \"Pam.\"
    Spray a 9-inch pie pan or quiche pan with Pam.
    Arrange celery, onion and vegetables in pie pan.
    In a medium bowl, beat the eggs, yogurt, milk and 3 ounces of the Swiss cheese and the salt and pepper.
    Pour into pie plate.
    Sprinkle remaining cheese on top.
    Bake for 35 minutes until a knife, inserted in center, comes out clean.
    Approximately 270 calories per serving.
