Lemon Curd - cooking recipe
Ingredients

1/2 lb. sugar
3 oz. butter or margarine
3 egg yolks, beaten
juice and rind of 2 lemons, juice strained
Preparation

Cream the sugar and butter together, then beat and add beaten egg yolks, lemon juice and rind.
Cook slowly in double boiler until mixture gets thick.
Delicious used as a spread on bread or a filling for tarts or sponge cake.
