Cream Of Broccoli Soup - cooking recipe

Ingredients
    2 1/2 lb. frozen broccoli
    1/2 lb. diced onions
    1 bay leaf
    7 qt. chicken stock, hot
    10 oz. butter
    10 oz. flour
    2 qt. hot milk
    1 qt. light hot cream
Preparation
    Heat stock, add broccoli, onions and bay leaf.
    Simmer for 1 hour.
    Combine flour and butter to make roux.
    Cook 8 to 10 minutes, but do not brown.
    Add cooked stock to roux gradually, stirring until slightly thick and smooth.
    Simmer additional 1 1/2 hours.
    Pass through food mill.
    Add heated milk and cream; adjust seasoning.
    Serves 50.
