Sweet Potato-Pineapple Rings - cooking recipe

Ingredients

2 c. cooked, mashed sweet potatoes
2/3 c. packed brown sugar
1/4 c. melted butter
1/2 c. orange juice
1 tsp. pumpkin pie spice
1 tsp. orange peel
1/4 c. chopped pecans
1/2 c. raisins
1 (No. 2) can pineapple rings
miniature marshmallows

Preparation

Combine sweet potatoes, brown sugar, butter, orange juice, pumpkin pie spice, orange peel, pecans and raisins, mixing well. Drain pineapple slices and place in baking dish.
Mound 1/3 cup of sweet potato mixture on top of each pineapple slice.
Bake at 375\u00b0 for 20 minutes, then top with marshmallows and bake 5 minutes longer.
Makes 10 servings.
