Hot 3 Bean Casserole(Diabetic) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 c. chopped onion
    1 c. celery
    2 cloves garlic, minced
    1 (15 oz.) can peas, drained
    1 (15 oz.) can kidney beans
    1 c. chopped tomato
    1 (8 oz.) can tomato sauce
    2 1/2 c. (10 oz.) frozen cut green beans
    1 c. water
    1 to 2 jalapeno peppers, minced
    1 Tbsp. chili pepper
    2 tsp. sugar
    1 1/2 tsp. ground cumin
    1 tsp. salt
    1 tsp. dried oregano leaves
    1/4 tsp. black pepper
Preparation
    Heat olive oil in skillet at medium heat until hot. Add onion, celery and garlic. Cook and stir for 5 minutes or until onion is translucent. Add remaining ingredients except green beans. Bring to a boil and reduce heat to
    low. Simmer, uncovered, for 20 minutes. Add green beans. Simmer, uncovered, for 10 minutes. Garnish with oregano. Makes 12 (1/2 cup) servings.
