Peter'S Chicken And Rice - cooking recipe
Ingredients

4 to 5 lb. roasting chicken, cut up
1/4 c. vegetable oil
1/2 lb. smoked sausage, cut in 1/2-inch pieces
2 (10 1/2 oz.) cans condensed chicken broth
1 (14 1/2 oz.) can tomatoes, cut up
2/3 c. water
1 c. chopped onions
2 large cloves garlic, minced
2 tsp. salt (optional)
1/4 tsp. crushed red pepper
1 (10 oz.) pkg. frozen peas
2 c. converted brand rice
Preparation

Brown chicken in oil.
Pour off fat.
Add sausage, tomatoes, water, onions, garlic, salt and pepper.
Cover and cook over low heat 40 minutes. Add remaining ingredients. Cover and cook 30 minutes more or until chicken is done.
Yields 8 servings.
