Oat Pancakes - cooking recipe

Ingredients
    1 c. all-purpose flour
    1/2 c. Quaker oats (quick or old fashioned), uncooked
    1 Tbsp. baking powder
    1/2 tsp. salt (optional)
    1 c. skim milk
    1/4 c. egg substitute or 1 egg, beaten
    2 Tbsp. vegetable oil
Preparation
    Heat griddle over medium-high heat (or preheat electric griddle or skillet to 375\u00b0).
    Oil lightly. Combine dry ingredients.
    Add milk, egg and oil. Stir just until dry ingredients are moistened.
    For each pancake, pour about 1/4 cup batter on hot griddle.
    Turn when tops are covered with bubbles and edges look cooked.
    Turn only once.
    Top with fresh or frozen berries or add blueberries or raspberries to batter.
    Makes 12 pancakes.
