Ingredients

pork roast, boned and tied (1/2 to 3/4 lb. per person)
Preparation

With fat side up, place on rack in roasting pan. Sprinkle with salt and pepper and a little garlic powder. Bake, uncovered, until browned well.
Tent with foil.
Bake at 350\u00b0 for 35 to 40 minutes per pound. Surround with sauerkraut the last 20 to 30 minutes. Remove ties, slice and serve.
