Mexican Fiesta Omelet - cooking recipe
Ingredients

1/4 c. diced red bell pepper
1/4 c. diced green bell pepper
1 small onion, finely diced
1 small tomato, diced
1/4 tsp. dried leaf basil
1 c. egg substitute (equals 4 eggs)
1 Tbsp. hot or medium salsa
Preparation

Spray a skillet with nonstick cooking spray.
Add bell peppers and onion; saute until onion in translucent.
Add tomato and basil and mix well.
Saute another minute.
Remove from pan and keep warm.
