Avocado With Warm Tomato And Basil Vinaigrette - cooking recipe

Ingredients
    2 large ripe tomatoes, peeled, seeded and diced
    1/2 c. chopped fresh basil leaves
    4 Tbsp. red wine vinegar
    1/2 c. light olive oil
    2 Tbsp. Dijon mustard
    salt and pepper to taste
    2 to 3 avocados, halved and pitted
Preparation
    In a saucepan combine all vinaigrette ingredients.
    Bring to a simmer.
    Put avocado halves on individual plates.
    Spoon the warm sauce over the avocados.
    Garnish each with a basil leaf and serve immediately.
