Olive Macaroni Salad - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/2 c. mayonnaise (regular or reduced fat)
    3/4 c. chopped coarsely \"Spanish Salad\" olives (no frills type are great)
    3/4 c. liquid from \"Spanish Salad\" olives
    1 large onion, grated
    2 Tbsp. dried or fresh parsley (optional)
    1 lb. cooked and drained elbow or spiral macaroni (use less salt in cooking water because olives are salty)
Preparation
    Mix well all of above, except last ingredient.
    Chill in large bowl or container, covered, while macaroni cooks.
    Rinse cooked macaroni briefly.
    Cool and stir while cooling (for approximately 5 minutes).
    Add macaroni and chill again.
    Serve cold.
    Add more olive liquid to loosen, if necessary.
