Ingredients

1 (9-inch) baked pie shell
1 qt. strawberries
1 c. sugar
3 Tbsp. cornstarch
whipped cream (optional)
Preparation

Wash, drain and cap strawberries.
Place half of berries in baked pie shell.
Crush the remaining berries and, if necessary, add water to make 1 1/2 cups juice.
Bring to a boil and stir in mixture of sugar and cornstarch.
Cook until clear (boil 1 minute).
Pour mixture over berries in shell and chill at least 3 hours.
Top with whipped cream, if desired.
