Copper Pennies(Carrots) - cooking recipe

Ingredients
    2 lb. carrots, peeled and sliced like thick coins
    1 large green pepper, chopped
    1 large onion, chopped
    1 can tomato soup
    1/2 c. sugar
    1/2 c. vegetable oil
    1/2 c. white vinegar
    1 tsp. dry mustard
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Cook sliced carrots in salted water for about 10 minutes or just barely done.
    Drain.
    Cool.
    Place in large bowl.
    Add onions and green pepper.
    Combine, blend remaining ingredients and pour over carrots.
    Marinate overnight in refrigerator.
    Keeps 1 week.
