Egg Scramble - cooking recipe

Ingredients
    5 Tbsp. butter or margarine, divided
    2 Tbsp. all-purpose flour
    2 c. milk
    1/2 tsp. salt
    1/8 tsp. pepper
    1 c. grated Cheddar cheese
    1 c. chopped ham or Canadian bacon
    1/4 c. chopped green onion
    1 doz. eggs, beaten
    1 (4 oz.) can mushroom stems and pieces, drained
    1 1/2 c. bread crumbs, buttered
    1/8 tsp. paprika
Preparation
    Melt 2 tablespoons butter and add flour, blending until smooth.
    Cook over low heat until bubbly.
    Gradually stir in milk; cook until smooth and thickened, stirring constantly.
    Add salt, pepper and cheese; heat until cheese is melted, stirring constantly.
    Set aside.
